The Lowly Dandelion Becomes a Star
Before these yellow flowers appear in lawns each spring,
Valley Grange uses bushels of the green leaves of the dandelion
to serve at one of its popular public dinners. Eating the young
dandelion greens is a Pennsylvania Dutch tradition. Actually the
dandelion greens are now grown commercially by a local produce
farm especially for the Grange's use. This year 50 pounds - or
about five bushels - of dandelion was served. If you think digging
it out of your lawn is tedious work, try cleaning this much.....luckily
it didn't take long thanks to the efforts of about a dozen volunteers
at the pre-dinner work night.
